Vi har firat min fina syster Anette och hennes Tommy som nyss har gift sig. Vi gjorde det enkelt när det var fredagkväll och körde på tacos, kanske helt fel eftersom dom varit i Mexico i 2 veckor :-)) men det passade så bra en fredagkväll efter jobb och så. Mycket går ju att förbereda och det gillar ju alla!
Det här blev kvällens meny:
- Bubbel, smördegshjärtan med soltorkade tomater och ost, jordgubbar med chokladdopp
- Carnitas och fisktacos med grönsaker och röror
- Prinsesstårta och kaffe
(Tyvärr blev det inga foton på plocket och min tårta)
INGREDIENSER
- 400 g torskrygg eller torskfilé
- 1 ägg
- vetemjöl
- panko eller ströbröd
- salt och nymalen vitpeppar
- olja till pannan
Gör så här:
- Dela fisken i kuber när den är halvtinad och låt den tina helt.
- Torka fiskbitarna lätt, salta och peppra rejält (det finns också kryddmixer för fisktacos).
- Ta 3 skålar, en med vetemjöl en med uppvispat ägg och en med panko.
- Vänd fisken först i mjölet sedan ägget och sist i panko.
- Stek i en panna med rejält mycket olja tills fiskbitarna är bruna och krispiga.
Tuppens näbb betyder visst namnet på den här heta salsan från Mexico, chilihettan ska kännas som små stick av näbben. Passar utmärkt till grillat och kött och fisk av alla slag!
PICO DE GALLO
- 2 askar körsbärstomater
- 1 rödlök
- 1 kruka koriander
- 1 lime
- tabasco eller sambal
- salt och nymalen svartpeppar
Gör så här:
- Dela tomaterna så smått du kan och finhacka löken.
- Blanda i hackad koriander och några stänk tabasco.
- Smaka av med lime, kryddor och om mera tabasco.
MANGOSALSA
- 1 fp fryst mango eller 1 ätmogen färsk
- 1 ask körsbärstomater
- 1-2 msk finhackad rödlök
- 1/2-1 kruka koriander
- 1/2 citron eller 1 lime, saften av den
- 1 msk flytande honung
- 1 msk olivolja
- salt och nymalen svartpeppar
- chili om man vill (jag valde utan eftersom den andra salsan var hot)
Gör så här:
- Dela tomaterna i småbitar och finhacka lite rödlök och koriander.
- Blanda ihop allt och smaka av med syra, sötma, salt och peppar.
Istället för guacamole så gjorde jag en röra med bönor som blev god men inte lika mjuk som en “guccamucka” men ett helt ok alternativ. Nästa gång ska jag testa att göra med svenska gröna ärtor.

GRÖN BÖNRÖRA
- 250 g sojabönor/ edamamebönor
- 2 klyftor vitlök
- 2 dl creme fraiche eller yoghurt
- 1 lime, saften av den, citron funkar också
- 1/2 kruka färsk basilika eller några kvistar mynta
- salt och nymalen svartpeppar
Gör så här:
- Tina bönorna och mixa dom tillsammans med vitlöken och basilika eller mynta.
- Rör ned cremefraichen och smaka av med limesaft och kryddor.
V ITLÖKSSÅS är ett måste tycker jag tillsammans med andra röror!
- Blanda bara creme fraiche med riven vitlök, salt och nymalen svartpeppar
