Det är sällan jag köper skalade räkor men ibland händer det och jag blev nyfiken att testa coops handskalade räkor som jag inte sett tidigare. Har man tid att skala frysta så är de säkert bäst både vad gäller miljö och tillsatser men ibland får man göra det lättsamt också. Det här blev gott trots att jag hade få ingredienser i pastan. Jag gillar att ha riven ost på men då skriker väl alla italienare att det inte ska vara parmesan på räkor, ha ha man gör ju som man vill i köket, visst är det härligt 😉
INGREDIENSER 4 pers
- okokt pasta för 4, ca 350 g
- 250-300 g skalade räkor
- 2 klyftor vitlök
- 2 salladslökar eller 1 dm purjolök
- 250 g körsbärstomater
- 1 näve bladspenat
- 1 näve ruccola
- 3 dl grädde
- 1 dl kokvatten från pastan
- 2 msk pressad citron
- 3 msk olja
- salt och nymalen svartpeppar
- färska eller torkade örter är såklart gott men det glömde jag!
GÖR SÅ HÄR:
- Koka pastan.
- Hacka vitlök, strimla salladslök och dela tomaterna i halvor.
- Hacka ruccola och spenat.
- Fräs vitlök och salladslök mjuk i oljan utan att den får färg.
- Låt tomater, ruccola och spenat snabbt svänga med.
- Tippa i grädde och pasta vatten och låt allt bara få ett uppkok.
- Slå vattnet av pastan när den är al´dente, tippa i såsen och låt allt bara snabbt koka ihop.
- Smaka av med salt, nymalen svartpeppar och pressad citronsaft.
- Servera direkt på varma tallrikar med riven lagrad ost.
