Hej mina vänner! Här har jag haft ett långt blogguppehåll men jag hoppas att ni är med mig ändå. Det är konstiga tider nu men trots mera tid hemma så har det blivit att jag grejat ute istället för inne vid datorn. Nu går jag däremot på 4 veckors ledighet och nu regnar det, ha ha det är skönt med ledighet ändå. Vi har varit med kompisar ute på Näset i helgen och det har varit jättemysigt, paella blev det på Muurikan. Till lite plock före gjorde jag en ruccolapesto och en tomatsalsa som vi åt med salami, oliver och kex.
RUCCOLAPESTO recept från Coop
- 70-100 g ruccola
- 1/2 dl solroskärnor
- 1-1,5 dl finriven lagrad ost t.ex västerbotten eller parmesan
- 1 stor klyfta vitlök
- 1/2 citron, saften av den
- 1 dl neutral olja
- 2 tsk honung
- salt
GÖR SÅ HÄR:
- Rosta solroskärnorna i en torr stekpanna tills dom fått lite färg och låt dom kallna.
- Lägg ruccola, solroskärnor, vitlök, honung och olja i en matberedare/mixer och mixa.
- Pressa i citronsaft, vänd ner 1 dl ost och smaka av med salt.
- Vill du ha peston tunnare så tillsätt mera olja, tjockare så riv i mera ost.
TOMATSALSA
- 250 g körsbärstomater
- 1 liten rödlök, typ 3 msk finhackad lök
- 1 näve basilikablad
- 2-3 msk olivolja
- 1/2-1 msk vinäger
- salt och nymalen svartpeppar
- några droppar tabasco om du vill ha lite hetta!
GÖR SÅ HÄR:
- Dela tomaterna i småbitar, hacka rödlök och basilika.
- Blanda ihop allt med olja, vinäger och kryddor.
- Smaka av om du vill ha mera syra och kryddor. Ibland kan det vara gott med pyttelite honung!
De här rågkorgarna från Linkosuo är jättegoda tycker jag och lätta att fylla med goda grejer, de finns även smaksatta. De fanns med i min senaste Smakbox.
ROMRÖRA
- 200 g färskost, typ Philadelphia
- 1 dl creme fraiche 34%
- 1 burk stenbitsrom, större modellen
- 3 msk hackad dill och ev. dillvippor eller gräslök till garnering
- nymalen svartpeppar och ev. salt
GÖR SÅ HÄR:
- Rör ihop osten med cremefraichen så det blandas ordentligt.
- Vänd ner hälften av romen och dillen, smaka av med salt och peppar.
- Lägg på bröd/kexbit och garnera med resten av rommen.
