Den här kombon med citron och rosmarin är bara så underbar, testa om du inte redan gjort det. Nu vill jag tjata lite om kycklinglårfilé igen för det är den absolut godaste och saftigaste biten på kycklingen tycker jag och även om den steks lite för länge så blir den inte torrtråkig som bröstfilén lätt blir, slut på predikan 😉 Var försiktig så du inte vräker i rosmarin för den smaken “växer” och smakar mycket efter en stund!
Ingredienser Kyckling nr1
- 500g kycklinglårfilé
- 1 dl vin
- 3 dl kycklingbuljong
- 1 citron, skal och saften av den
- färsk rosmarin, liten kvist
- 2 dl grädde
- 1/2 msk hackad rosmarin
- maizena till redning
- salt och nymalen svartpeppar
- smör/olja till stekning
Gör så här:
- Krydda kycklingen med salt och peppar och bryn den i en panna/gryta med smör/olja.
- Tippa i vin, buljong, citronsaft och rosmarinkvist i pannan och låt kycklingen småputtra under lock i 10-15 minuter.
- Lyft ur kycklingen och rosmarinkvisten, låt nu grädden koka med i buljongen, smaka av med hackad rosmarin och red av såsen så den blir lite “simmig”.
- När såsen är perfekt lägger du i kycklingen i pannan, låter allt koka ihop och serverar den med t.ex rostade rotsaker, potatis av ngt slag eller ris.
Det här är mat som sköter sig själv mina vänner och dessutom blir det en saftig kyckling med en ljuvligt god sås av skyn i formen. Har du tid så blir det väldigt gott att blanda lite rosmarin, vitlök och rivet citronskal med 75 g smör att gnida in kycklingen med, gärna under skinnet. En perfekt rätt när man är ledig!
INGREDIENSER Kyckling nr2
- 1 hel färsk svensk kyckling
- 1 citron
- 3-4 klyftor vitlök
- 4 kvistar rosmarin
- (1 stjälk selleri om du råkar ha)
- salt och nymalen svartpeppar
Sås:
- 3 dl buljong från formen
- 2 dl creme fraiche
- 1-2 tsk hackad rosmarin
- 1 msk pressad citron
- salt och nymalen svartpeppar
Servera kycklingen till:
- Kokt eller pressad potatis
- Rostade rotsaker
GÖR SÅ HÄR
- Sätt ugnen på 175 grader.
- Lägg kycklingen i en ugnsform som bara är lite större än kycklingen.
- Pressa citronen i och på kycklingen, salta, peppra och ha 1 dl vatten i formen.
- Dela vitlöksklyftorna i halvor och stick in dem i eller runt kycklingen (ev. lägger du i sellerin också)
- Låt kycklingen vara i ugnen 65-70 min, temp vid benet ska vara 70 grader.
- Lyft kycklingen ur formen och se till att saften från kycklingen stannar i formen.
- Vispa ur den med lite vatten och sila så du får ca 3 dl buljong.
- Koka upp buljongen med creme fraiche, smaka av med hackad rosmarin, pressad citron och kryddor.
- Dela kycklingen i bitar, servera med såsen och potatis eller rotsaker av något slag.
