Rödbetssallad med fetaost och linser

    Rödbetor gillar jag och de blir extra goda med chevré eller fetaost. Linser använder jag inte ofta i mitt kök, oftast när jag gör en vegetarisk tomatsås till pasta eller i en lasagne. Vi har varit på Gotland i sommar och då åt jag en god sallad med Gotlandslinser i och köpte med mig en påse hem. Kokade dem i en grönsaksbuljong och det blev riktigt goda med citron och kryddor. Det funkar lika bra med färdigkokta linser. Den här salladen kan du såklart blanda i mera grönsaker om du vill och att toppa med rostade frön eller nötter gör den extra god!

    INGREDIENSER

    • 300g kokta rödbetor
    • 250g kokta linser, valfri sort
    • 1 liten påse bladspenat, ca. 70g
    • 150 g feta eller chevre`ost 
    • 4 msk rapsolja
    • 4 msk pressad citron
    • 1 msk flytande honung
    • 1 stor klyfta riven vitlök
    • 1 tsk örtkrydda t.ex timjan eller oregano
    • salt och nymalen svartpeppar

     

    Gör så här

    1. Lägg spenaten på ett serveringsfat.
    2. Klyfta betorna och lägg dem på spenaten.
    3. Fördela linser och osten i bitar över betorna.
    4. Blanda ihop olja, citron, honung och kryddor och häll över salladen.

    Jag älskar att laga mat och att skriva recept och de flesta på bloggen är mina egna varianter. Min ambition är att äta mera grönt, handla mera ekologiskt och att bara köpa svenskt kött när jag inte äter av älgköttet i frysen då! Såklart lagar jag helst mat från grunden utan konstiga tillsatser och med fina råvaror, det är grejer det ;-) Välkomna till mitt kök!
