Jag vet egentligen inte vad jag ska kalla den här mixen med ett kort namn, ge mig förslag! Kronärtskocksallad? Grillad paprikasallad? Inte så korta direkt 😉 Ja nu skrev jag “Tapasgrönsaker” för det här är så gott att äta tillsammans med chark, ost, bröd, pesto och röror. Grillad paprika blir så himla söt och god men har du bråttom och inte gillar “pillerjobb” så finns det färdiggrillad paprika att köpa. I den här marinaden kan du lägga i det du gillar, soltorkade tomater, fetaost, bönor av olika slag, småtomater, champinjoner ja listan kan göras lång. Dessutom går den att förbereda och bara plocka fram när det är dags för plock. Jag tog inte så många grejer den här gången, färska örter är också gott att lägga i men jag tog all basilika i peston. Det här var plocket före pastan igår när vi firade sonen Petter som fyllde 34 år, tur att vi har ett barn som bor nära!
INGREDIENSER
- 2 röda snackpaprikor eller vanliga röda
- 1 stor gul paprika eller 2 mindre
- 1 burk kronärtskockshjärtan
- 1 liten burk oliver
- 1 rödlök
Marinad:
- 4 msk pressad citron
- 4 msk kallpressad rapsolja
- 2 klyftor riven vitlök
- 2 tsk honung
- 1 tsk torkade örter som du gillar, timjan, oregano
- chili av något slag om du gillar det t.ex flakes eller 1/2 tsk sambal oelek
- salt och nymalen svartpeppar
Gör så här:
- Sätt ugnen på grill.
- Rör ihop marinaden.
- Häll av vattnet från skockorna, dela varje i 4 bitar och lägg dom i marinaden.
- Lägg paprikorna hela i en ugnsform högt upp, grilla och vänd tills de är svarta.
- Lägg paprikorna i en burk med lock när dom är klara.
- Skala och dela löken i båtar eller skivor och lägg den och oliverna med skockorna.
- När paprikorna svalnat lite så pillra bort skal och frön men håll dig över burken och spara all vätska som rinner ut, sila den sist över de övriga grönsakerna.
- Dela paprikan i bitar och vänd runt allt i marinaden, smaka av om du vill ha mera syra eller kryddor.
- Den kan nu gärna stå och dra en stund eller över natten.
TOMATSALSA
Det behövs inget recept direkt men…..här har jag visst ett
- ca 200g körsbärstomater i småbitar
- 2 msk finhackad rödlök
- olja, vinäger, salt och peppar
- chili om du gillar det
- hackad färsk ört av ngt slag t.ex persilja, koriander, gräslök, basilika
Blanda ihop allt bara och smaka av om det behövs en gnutta honung
PESTO
Nu skrev jag inte upp direkt hur jag gjorde den här gången men jag tog ungefär lika mycket ruccola som basilika, blir gott tycker jag. Några blad av Cubansk Oregano hängde också med. Det var längesen jag hade pinjenötter i, rostade solroskärnor funkar perfekt. Däremot vill jag ha lite citron eller vinäger i min pesto och det har jag inte sett i några recept. Den blir fräschare och inte så “jolmig” och en lagrad ost som präst eller Västerbotten funkar lika bra som Parmesan om ni frågar mig då. Ja ni ser det är bara att freestyla, flyger det till med olja så mixa med mera solroskärnor eller vänd ner mera ost på slutet. Hoppsan det blev mycket nu för en liten pesto 🙂
